- 15.25 oz Strawberry Cake Mix (Pillsbury)
- 2 large eggs
- ½ cup unsalted butter (1 stick, melted)
- 1 tsp vanilla extract
- 2 Tbsp strawberry preserves
- 1 Tbsp cream cheese (softened)
- ¾ cup powdered sugar
- ⅛ tsp salt
- 1 tbsp milk
- 2 Tbsp Freeze dried strawberries (chopped into small pieces)
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a 9×9” pan with parchment paper and spray it with nonstick spray.
- Combine the strawberry cake mix, 2 eggs, melted butter, and vanilla extract in a large mixing bowl. Mix until well incorporated.
- Spread the brownie batter into the prepared pan evenly.
- Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the brownies in the pan before transferring them to a wire rack to cool completely.
- Prepare the frosting by whisking together the strawberry preserves and cream cheese until well blended.
- Add powdered sugar, salt, and milk to the cream cheese mixture and whisk until smooth.
- Spread the frosting over the cooled brownies with a rubber spatula.
- Garnish with freeze-dried strawberries if desired.
- Slice into squares, serve, and enjoy!
Notes
Store in an airtight container at room temperature for about 3 days or in the fridge for up to a week. Can be frozen for up to a month.
