- 1 package Oreo cookies
- 4 tablespoons unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1/4 cup mint chocolate chips
- Extra Oreo cookies for topping
Instructions
- Prepare the Oreo crust by crushing the Oreo cookies into fine crumbs and mixing with melted butter. Press into the bottom of a springform pan.
- Blend the cream cheese mixture by beating together softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the whipped cream and mint chocolate chips into the cream cheese mixture.
- Assemble the cheesecake by pouring the cream cheese mixture over the prepared crust and smoothing the top.
- Chill the cheesecake in the refrigerator for at least 4 hours or until fully set.
- Garnish by sprinkling extra crushed Oreo cookies on top before serving. Slice and enjoy!
